Ingredients: 4 medium potatoes, peeled and cut into cubes

2 medium carrots, peeled and cut into cubes as well as 2 hard-boiled eggs, cooked and chopped into small pieces

You’ll also need 1 cup cooked green peas (can be frozen or canned) and ½ cup pickles chopped into small cubes

Other ingredients: ½ cup of cooked ham or roast chicken, cut into cubes (optional) as well as ½ cup of mayonnaise

2 tablespoons of mustard (optional), salt and pepper to taste

You can use fresh chopped parsley as a garnish for a pop of color.

Boil the potatoes and carrots in salted water until tender but not crumbly — about 10-15 minutes.

Drain them and let them cool. In a large bowl, mix together the potatoes, carrots and chopped hard-boiled eggs.

Also mix in cooked green peas, pickles and ham or chicken (if using).

Stir everything gently to combine the ingredients.
