Ingredients for blueberry cheesecake
For the base: 200 g of digestive biscuits, 100 g of melted butter.
For the filling: 500 g of cream cheese, 150 g of sugar, 3 eggs, 1 teaspoon of vanilla extract, 200 ml of sour cream.
For the blueberry topping: 200 g of fresh blueberries, 50 g of sugar, 2 tablespoons of water, 1 tablespoon of cornstarch.
Decoration (optional): Fresh mint leaves, powdered sugar.
Base Preparation
Crush the cookies in a food processor until you have fine crumbs.
Mix the cookie crumbs with the melted butter.
Press the mixture into the base of a springform cake pan. Refrigerate while you prepare the filling.
Filling Preparation
Preheat the oven to 180°C.
In a large bowl, beat cream cheese until smooth. Add the sugar and continue beating.
Add the eggs one at a time, beating well after each addition.
Add vanilla extract and sour cream. Mix until you obtain a homogeneous mixture.
Assembly and Baking
Pour the cheese mixture over the base of cookies in the mold.
Bake in the preheated oven for approximately 45-50 minutes, or until the center is almost set.
Let cool to room temperature and then refrigerate for at least 4 hours or overnight.

In a saucepan, combine the cranberries, sugar, water and cornstarch.
Cook over medium heat, stirring constantly, until the mixture thickens and the cranberries soften.
Let cool and then pour over the chilled cake.

Just before serving, garnish with fresh mint or rosemary leaves and sprinkle with powdered sugar for a festive touch.
Carefully unmold the cake.
