Cod a la Vizcaína ingredients

To prepare this dish, you need the following ingredients: 4 loins of desalted cod and 4 tablespoons of extra virgin olive oil,

1 large onion, finely chopped, 2 cloves of garlic, minced, 1 red pepper, cut into strips and 1 can (400 g) of crushed tomato.

You will also need 1 glass of white wine, 1 bay leaf, 1 teaspoon of sweet paprika and black pepper to taste.

Finally, your remaining ingredients are salt to taste and fresh chopped parsley as a garnish.

Prepare the cod

Rinse the desalted cod loins under cold water and pat them dry with kitchen paper.

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and cook until golden.

Add the minced garlic and cook for a few minutes until fragrant.

Prepare the Vizcaína sauce

After adding the chopped garlic, add the red pepper strips and cook until tender.

Pour the crushed tomato into the pan and cook for about 10 minutes over medium heat.

Add the bay leaf, paprika, black pepper and salt to taste. Stir well.

Pour the white wine into the pan and let it cook for about 5 minutes so that the alcohol evaporates.

Cook and serve the Cod a la Vizcaína

Arrange the cod loins on the Vizcaya sauce in the pan.

Cover the pan and cook over low heat for about 10-15 minutes, or until the cod is cooked through.

Remove the bay leaf and adjust the seasoning if necessary.

Serve the Biscayan-style cod hot, accompanied by the sauce and garnished with fresh chopped parsley.
