This Christmas Mushroom Risotto is an elegant and delicious dish that can be an excellent option for a festive meal.

Mushroom risotto is a traditional Italian dish usually made with Arborio rice, mushrooms, vegetable broth, onion, white wine, and Parmesan cheese.

For a Christmassy touch, you could incorporate seasonal ingredients like fresh winter herbs, dried fruits, or even some type of festive cheese.

Ingredients for Christmas Mushroom Risotto

1 1/2 cups Arborio rice, 1/2 cup dry white wine, 1 onion, finely chopped,

2 cloves of garlic, minced, 200 g fresh mushrooms, sliced, 1 sprig of fresh rosemary,

4 cups hot vegetable broth, 1/2 cup grated Parmesan cheese,

2 tablespoons of butter, salt and pepper to taste, chopped fresh parsley to decorate

1. Bring the vegetable broth to a boil and keep it warm throughout the cooking process. In a large skillet, melt a tablespoon of butter over medium heat.

2. Sauté the onion and garlic: Add the chopped onion and garlic to the melted butter. Cook until transparent.

3. Add the mushrooms: Add the sliced ​​mushrooms and cook until they are golden brown and have released their juices.

4. Add the Arborio rice: Pour the Arborio rice into the pan and stir to mix well with the ingredients. Cook for a few minutes until the rice begins to toast slightly.

5. Deglaze with white wine: Pour the white wine over the rice and stir constantly until the liquid has been absorbed.

6. Add the broth: Add a cup of hot broth to the rice and cook over medium-low heat, stirring constantly. Continue adding broth little by little as the rice absorb it.

7. Halfway through cooking, add the rosemary sprig to the risotto mixture for flavor. Cook until creamy: Continue this process until the rice is al dente and the risotto has a creamy consistency.

8. Remove the rosemary sprig, add the grated Parmesan cheese and the remaining butter. Stir well until everything is incorporated. Adjust the seasoning with salt and pepper.
